
Ingredients:
For the batter:

6 eggs

¾ cup sugar

⅔ cup potato starch
For the chocolate swirl:

3 tablespoons cocoa powder

2 tablespoons sugar

2 tablespoons oil
-
5 tablespoons water
Instructions:

Preheat the oven to 170°C.

Separate the eggs into yolks and whites.

Beat the egg whites with half the sugar for about 7 minutes, until stiff peaks form.

In a separate bowl, beat the yolks with the remaining sugar for about 5 minutes, until light and fluffy.

Add the potato starch into the yolk mixture.

Gently fold the beaten egg whites into the yolk mixture using a slow, careful folding motion.

To prepare the chocolate mixture: In a small saucepan over low heat, mix the cocoa, sugar, oil, and water until smooth.

Add the chocolate mixture to the batter and fold 3 times for a marbled effect.

Pour into a baking pan and bake for 30 minutes.

Optional: Dust with powdered sugar before serving.
