Ingredients
For the chicken:
- 1 lb (450 g) chicken thighs or breast, sliced
- 2–3 tablespoons olive oil
- Juice of 1 lemon
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon turmeric
- ½ teaspoon cinnamon
- Salt & black pepper, to taste

Instructions
- Marinate the chicken
In a bowl, mix olive oil, lemon juice, garlic, and spices.
Add the chicken and coat well.
Let sit for at least 30 minutes (or up to overnight for deeper flavor). - Cook
- Oven: Bake at 400°F (200°C) for 20–25 minutes
- Pan: Cook over medium-high heat until golden and cooked through
- Slice (if needed)
Cut into thin strips for that classic shawarma texture.
