Ingredients
- 1 medium sweet potato, cooked and mashed
- 1 tablespoon lentil flour
- 1 tablespoon oat flour
- 1 teaspoon cornstarch
- ½ teaspoon baking soda
- 1 egg
- 2 tablespoons 3% fat yogurt
- 1 tablespoon olive oil
- Salt, to taste
Instructions
- Prepare the sweet potato
Cook (boil or bake) until soft, then mash well. - Mix everything
Add lentil flour, oat flour, cornstarch, baking soda, egg, yogurt, olive oil, and salt.
Mix until you get a thick batter. - Shape the fritters
Form small patties with your hands. - Cook on Pan: Heat a non-stick pan and add a teaspoon of oil.
Over medium heat, spoon medium-sized rounds onto the pan.
When bubbles appear (after about 4 minutes), flip and cook for another 4 minutes on the other side. - Serve. Recommended to serve with yogurt and chives or with tzatziki.
