Sweet Potato Lentil Fritters

Ingredients

  • 1 medium sweet potato, cooked and mashed
  • 1 tablespoon lentil flour
  • 1 tablespoon oat flour
  • 1 teaspoon cornstarch
  • ½ teaspoon baking soda
  • 1 egg
  • 2 tablespoons  3% fat yogurt
  • 1 tablespoon olive oil
  • Salt, to taste

 

Instructions

  1. Prepare the sweet potato
    Cook (boil or bake) until soft, then mash well.
  2. Mix everything
    Add lentil flour, oat flour, cornstarch, baking soda, egg, yogurt, olive oil, and salt.
    Mix until you get a thick batter.
  3. Shape the fritters
    Form small patties with your hands.
  4. Cook on Pan: Heat a non-stick pan and add a teaspoon of oil.
    Over medium heat, spoon medium-sized rounds onto the pan.
    When bubbles appear (after about 4 minutes), flip and cook for another 4 minutes on the other side.
  5. Serve. Recommended to serve with yogurt and chives or with tzatziki.
